Highland Lake Inn

I was pleasantly surprised by the location chosen today for a corporate meeting I was attending. Highland Lake Inn in East Flat Rock, NC has a long history of entertaining and training.  It's a beautiful area just made for gracious living with individualized cabin and house rentals available throughout the resort, complete with a working farm and garden.  The field salad was tremendously tasty and I enjoyed the sandwiches where they slipped in slices of fresh apple and mango (?), not sure, but it all really worked together in an unexpectedly pleasing way.  Dessert was a goat cheese based cheese cake with fresh fruit and whipped cream.  Sweetness itself!  One of the chef's serving us lunch explained the goat cheese made it lighter.  Thanks! That's just the excuse I was looking for!
